Savory Bison & Garlic Grits with Kumquat-Avocado Salsa

A hearty and rich dish featuring tender, seasoned bison served over creamy garlic grits, topped with a bright, citrusy salsa to cut through the richness.

Ingredients

  • 1 lb Bison ground
  • 1 cup Grits
  • 1 Avocado, diced
  • 5 Kumquats, finely diced (skin on)
  • 1 tsp Garlic powder
  • 2 cups Water
  • 2 tbsp Butter
  • Salt and pepper to taste
  • 1 tsp Vinegar

Instructions

Prepare the grits and bison separately to maintain contrasting textures.

  1. Bring 2 cups of water and a pinch of salt to a boil. Add the grits, reduce heat to low, and simmer, stirring occasionally, until creamy (about 20 minutes). Stir in 1 tbsp of butter and a dash of garlic powder.
  2. Season the bison ground with garlic powder, salt, and pepper. Sauté in a skillet over medium-high heat with the remaining butter until browned and cooked through, about 6–8 minutes.
  3. In a small bowl, gently toss the diced avocado, diced kumquats, and vinegar with a pinch of salt.
  4. Spoon a generous portion of grits into bowls, top with the cooked bison, and finish with a spoonful of the kumquat-avocado salsa.

Top with extra cracked black pepper for a spicy finish.
