Spicy Peanut Glazed Chicken
A delicious balance of sweet, salty, and spicy flavors with a satisfying peanut crunch.
Ingredients
- 2 chicken breasts, cut into bite-sized pieces
- 1/3 cup peanuts, roughly crushed
- 3 tbsp soy sauce
- 2 tbsp raw sugar
- 1 tsp dried chili flakes
- 1 tbsp cooking oil
- 2 tbsp water
- Salt and pepper to taste
Instructions
The sauce will reduce into a thick, sticky glaze that coats the chicken beautifully.
- Season the chicken pieces with salt and pepper.
- Heat oil in a large skillet over medium-high heat. Add chicken and sauté until golden brown and cooked through (about 6–8 minutes).
- In a small bowl, whisk together the soy sauce, raw sugar, chili flakes, and water.
- Reduce heat to medium and pour the sauce mixture into the skillet with the chicken.
- Simmer for 2–3 minutes, stirring constantly, until the sauce reduces into a thick glaze.
- Stir in half of the crushed peanuts.
Top with the remaining peanuts and serve over steamed rice.
