Spicy Peanut Glazed Chicken

A delicious balance of sweet, salty, and spicy flavors with a satisfying peanut crunch.

Ingredients

  • 2 chicken breasts, cut into bite-sized pieces
  • 1/3 cup peanuts, roughly crushed
  • 3 tbsp soy sauce
  • 2 tbsp raw sugar
  • 1 tsp dried chili flakes
  • 1 tbsp cooking oil
  • 2 tbsp water
  • Salt and pepper to taste

Instructions

The sauce will reduce into a thick, sticky glaze that coats the chicken beautifully.

  1. Season the chicken pieces with salt and pepper.
  2. Heat oil in a large skillet over medium-high heat. Add chicken and sauté until golden brown and cooked through (about 6–8 minutes).
  3. In a small bowl, whisk together the soy sauce, raw sugar, chili flakes, and water.
  4. Reduce heat to medium and pour the sauce mixture into the skillet with the chicken.
  5. Simmer for 2–3 minutes, stirring constantly, until the sauce reduces into a thick glaze.
  6. Stir in half of the crushed peanuts.

Top with the remaining peanuts and serve over steamed rice.
