Beef Sirloin Zucchini Udon Noodle Malt Vinegar

Tangy Malt-Glazed Beef & Udon Stir-Fry

A savory and quick stir-fry featuring tender beef and crisp zucchini tossed in a bright, vinegar-based glaze.

Ingredients

  • 1 lb Beef Sirloin, thinly sliced against the grain
  • 1 large Zucchini, sliced into half-moons
  • 2 portions Udon Noodles
  • 3 tbsp Malt Vinegar
  • 1 tbsp Sugar
  • 2 tbsp Oil
  • Salt and black pepper to taste

Instructions

Toss everything quickly over high heat to maintain the texture of the zucchini and the chew of the noodles.

  1. Prepare the udon noodles according to package directions, drain, and set aside.
  2. In a small bowl, whisk together the malt vinegar and sugar until the sugar dissolves.
  3. Heat oil in a large skillet or wok over high heat. Season the beef with salt and pepper, then sear in the pan for 2–3 minutes until browned. Remove the beef from the pan and set aside.
  4. Add the zucchini to the skillet and sauté for 3 minutes until tender-crisp.
  5. Return the beef and the cooked noodles to the pan.
  6. Pour the vinegar-sugar mixture over the ingredients and toss vigorously for 1 minute until the sauce reduces slightly and coats everything in a glossy glaze.

Serve immediately while the beef is tender and the sauce is warm.
